Istanbul holds one of the most layered coffee cultures in the world, rooted in a tradition that predates most of Europe's cafe history. Turkish coffee has been prepared here since the sixteenth century, brewed in copper cezve pots and served thick and unfiltered. That foundation remains vital, and since roughly 2012 a serious third-wave specialty movement has grown up alongside it, with local roasters sourcing direct-trade beans and building internationally recognised brands.
The city divides naturally along the Bosphorus. On the European side, Beyoglu and its sub-neighborhoods including Cihangir, Galata, and Karakoy form the densest specialty corridor. Further north, Nisantasi attracts a polished crowd. On the Asian side, Kadikoy and the adjacent Moda district constitute their own specialty hub with a more neighbourhood-oriented atmosphere.
What makes Istanbul distinctive is the coexistence of centuries-old Turkish coffee practice and one of the most technically accomplished modern specialty scenes outside Northern Europe. A visitor can drink a copper-pot Turkish coffee at a pavement table in Beyoglu in the morning and a light-roast V60 in Moda an hour later, and both feel entirely native to the city.
