Chicago is where American specialty coffee grew up. Intelligentsia, founded here in 1995, helped define the third-wave movement and set a standard for direct-trade sourcing that shaped cafes across the country. Today the city's coffee scene runs deep in every direction: from the Logan Square corridor where Gaslight, Four Letter Word and Allez compete block for block, to the West Loop where Sawada's Military Latte and Dark Matter's barrel-aged lots draw visitors from across the country.
The South Side tells a different story, with Anticonquista bringing cultivo-to-cup Guatemalan coffee to Pilsen in 2025 and Afro Joe's earning national recognition in Beverly for making specialty coffee genuinely accessible and community-rooted. Avondale added Milli by Metric, a 12,000-square-foot roastery cafe that Sprudge named one of the best cafe openings of the year.
Chicago rewards both the obsessive and the curious. Employee-owned Sputnik roasts on-site in Back of the Yards without pretension. Metropolis runs Friday cupping tours in Avondale. Plein Air serves seasonally rotating pour-overs next to a Frank Lloyd Wright house in Hyde Park. Whether the goal is a rare natural-process lot or a classic city espresso, Chicago delivers with a depth and range few American cities match.
