Rafael Pereira and Ludmila Espindola founded The Slow Bakery on Rua General Polidoro in Botafogo around the discipline of natural fermentation, with some loaves requiring thirty hours of preparation before they reach the counter. Cold brew and espresso anchor the drinks menu, and the bread itself has become so sought after that a dedicated Ipanema bread shop opened to handle overflow demand. The original Botafogo space remains the most atmospheric, particularly in the morning when fresh batches are still warm.
