Partisan occupies a bright corner on rue de Turbigo in the upper Marais, roasting its own coffee directly within the cafe space. The industrial-chic design, floor-to-ceiling windows, and serious filter menu draw a daytime crowd that knows its V60 from its aeropress. Co-founder Georges Karam sources with the same care he applies to the roast profiles, covering a wide geographic range of specialty origins.
