One of the original pioneers that reshaped Parisian coffee culture when it opened in 2011, Coutume operates from a gleaming laboratory-style space on rue de Babylone in the quiet 7th. Co-founder Antoine Netien earned Meilleur Torrefacteur de France in the cafe's first year, and 100% single-origin beans are still roasted in the Ile-de-France region. The equipment roster includes the first La Marzocco Strada in France alongside a Hario V60, siphon, and a cold extraction tower.
