Hibi Kaffe is a Japanese-founded micro-roastery launched in November 2024 by Ayae Maki Fredheim, who previously roasted at Lille Oslo Kaffebrenneri, now operating a counter inside The Little Pickle at Jens Bjelkes gate 9a. Her South American-focused, Nordic-light roast profile supplies the in-house bakery as well as Maaemo, Oslo's three-Michelin-star restaurant, giving this tiny operation an outsized footprint in the city's coffee world. The bakery counter added in January 2025 pairs sourdough and Japanese-Scandinavian pastries with espresso and pour-over brews from the same freshly roasted beans.
