The scene is anchored by a generation of local roasters who built serious operations before the term third wave entered common use: Cuvee Coffee has been roasting since 1998, Texas Coffee Traders since 1994, and Anderson's Coffee Company for over four decades. That deep roasting tradition gave the city an unusually strong foundation for the wave of precision-focused cafes that followed in the 2010s.
The geography of Austin coffee splits roughly along the Interstate 35 corridor. East Austin, particularly the East Cesar Chavez, East 7th Street, and Webberville Road corridors, holds the densest concentration of specialty cafes with the sharpest third-wave focus, including Flat Track Coffee, Fleet Coffee, Figure 8 Coffee Purveyors, and the Medici Roasting flagship at Springdale General.
