Standing Wave opened its South Side roastery-cafe in November 2025 in a nature-inspired space with a canoe overhead, paddle-lined walls, natural plank tables, and a back room fireplace. Founded in 2020 and relaunched in 2025 with the new brick-and-mortar location, the roaster brings small-batch precision to Sarah Street. A welcome addition to the South Side coffee landscape.
