Sample's founding espresso bar at 118 Devonshire Street has been running since 2014, serving single origins omni-roasted for both filter and espresso from their in-house production. Roasting happens on-site on Mondays and Wednesdays, so the beans you drink often left the drum days ago. Co-founders Shoji Sasa and Dan Yee also run Artificer, making this part of one of Sydney's most quietly influential coffee enterprises.
