Operating since 2004 in a former industrial space on Avenue de Gaspe, Le Falco is the only cafe in Montreal serving coffee prepared exclusively by the siphon method, producing a clean, full-bodied cup with none of the bitterness of espresso. The Japanese-inspired menu of onigiri and donburi bowls alongside the siphon theatre makes it an entirely singular experience in the city.
