Under owner Francesca Surano since 2010, Caffe Cantu at Piazza Cesare Cantu in Appio Latino was among the first addresses in Rome to serve filter coffee to the public, running V60, AeroPress and Chemex alongside house Mondi espresso. The pace is deliberately unhurried, the hours run from 6:30 in the morning to 11pm, and the piazza tables see local regulars at every meal. An important stop for anyone tracing the early history of specialty coffee in the city.
