Georgia · 17 hand-picked cafés
Tbilisi has transformed from a city where Nescafe and Turkish coffee were the default into one of the most compelling specialty coffee destinations in the Caucasus and Eastern Europe. The shift began around 2016 when Coffee LAB opened as Georgia's first in-house roastery cafe, and accelerated rapidly through the early 2020s as a wave of founder-led roasteries - Shavi, OKRO, BNKR, Erti Kava, Tsvari and more - set a standard that rivals the best scenes in Tbilisi's European peer cities. Today the city hosts a dense cluster of third-wave shops, most roasting their own beans or sourcing from trusted Georgian or international roasters, with filter programs and espresso menus that reflect genuine craft and seasonal thinking.
The geography of specialty coffee mirrors Tbilisi's distinct neighborhoods. Vera and Vake anchor the western cafe cluster, with multi-roaster filter bars and brunch-forward spots lining shaded streets behind Rustaveli Avenue. Chugureti, built around the pedestrian stretch of David Aghmashenebeli Avenue and the Fabrika creative compound, draws a creative and expat crowd to roasteries and hybrid coffee-wine venues. Sololaki - the oldest residential quarter with its wrought-iron balconies and narrow lanes - hosts quieter neighborhood spots where locals linger over V60s. The Marjanishvili and Isani corridors connect the dots with high-volume specialty shops convenient to commuters and metro riders.
What distinguishes Tbilisi is how naturally coffee culture sits alongside the city's deep wine tradition. Many of the best cafes double as natural wine bars by evening, and the interplay between Georgian terroir, international green buying and a young population of trained baristas gives the scene an energy that feels genuinely original rather than imported. Prices remain low by Western European standards, the welcome is consistently warm, and the pace - unhurried, conversational, oriented around a good cup - reflects a city that has absorbed third-wave principles without losing its own character.
