Many cafes double as cocktail bars after dark, a distinctly Manila format. The city's barista competition culture runs deep; founding baristas from Yardstick and Habitual have gone on to seed dozens of second-generation shops. The result is a scene that is fiercely local in sourcing yet technically sophisticated, with a warm, community-first hospitality that sets it apart from more austere specialty markets elsewhere in Asia.
