The flagship roastery of what was formerly 43 Factory Coffee Roaster, XLIII operates a Giesen W6A roaster on-site and sources exclusively SCA-graded single-origin Arabica through direct producer partnerships. Signature lots have included a Nueva Alianza Red Geisha from Peru, a Sudan Rume from Colombia, and a Volcan Valley from Panama. The glass-walled layout lets guests watch every roast in real time - a transparency philosophy that extends to printed origin cards at each table.
