Polly opened in August 2024 in a corner building alongside the railway tracks, run by Kato Avondts and her sister Paulien. Andy Roasters supplies the coffee, supplemented by homemade baked goods and affogatos, including a matcha version. The minimalist black-and-white interior and no oat-milk surcharge policy have quickly built a loyal following.
