Pablo's is one of the longest-running independent roasters in Denver, operating for nearly three decades from its Capitol Hill location on East 6th Avenue. The 1909 auto-repair garage conversion creates a cavernous, characterful interior with high ceilings and rotating local art. As one of the city's original specialty roasters, it carries a legacy position in the Denver coffee story that newer cafes simply cannot replicate.
