One of the original instigators of the local roaster movement in Guadalajara, Matraz has been roasting Mexican coffee for over a decade under master roaster Mauricio Campo, sourcing primarily from Chiapas, Oaxaca and Veracruz. The Providencia location is the main cafe and features a full breakfast menu with house-baked bread; a separate roastery location operates in nearby Vallarta San Jorge. Four Guadalajara locations in total make Matraz the city's most accessible house-roaster chain.
