Florence's ground-zero third-wave cafe, opened in 2013 by Francesco Sanapo on Via dei Neri near Santa Croce. The intentionally low counter was a deliberate statement against the Italian stand-and-sip tradition, inviting guests to slow down with filter coffee and single-origin espresso. Ditta roasts all its own beans and helped put Florentine specialty coffee on the European map.
